With Thanksgiving being less than a week away, I am sure some families are already planning their meals and shopping lists like crazy. Although I love the traditions around it, I am not the biggest fan of the kind and amounts of food being served. So in order to contribute a healthy dessert which still suits the theme of a typical Thanksgiving meal, I came up with these easy and vegan cranberry stuffed roasted pears. They are so sweet and look delicious, give it a try!
Roasted Pears With Cranberries And Pine Nuts (Vegan, Gluten Free)
Ingredients
- 1 large pear
- 2 tsp cranberry jam
- 2 tsp pine nuts
- 2 tsp maple syrup
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
Instructions
- Cut the pear in half, remove the core with a spoon and place on baking tray.
- Fill with cranberry jam and top with pine nuts
- Drizzle with maple syrup, cinnamon and nutmeg
- Bake at 180 C for 30 minutes until the maple syrup starts forming bubbles
