The end of the year is so close and I found the perfect recipe to celebrate it! Last week I spent 2 days making my favourite dessert of all times – Macarons. Although they are quite time consuming (and frustrating at times), the results are always worth it! I used the recipe for “Rose Champagne Macarons” from the book “Macarons” by Maison Ladurée (HERE). Although the recipes aren’t very precise, the book is full of amazing photos and loads of flavours to try!
One day I will invest some time in creating a “how-to” post about macaron basics, but as there are so many things to consider and so many tips and tricks to tell you, today will only serve as an inspiration. I can promise you, they are delicious!
All you need: Macarons are made of 4 ingredients: ground almonds, eggs, icing sugar and caster sugar. The cream however was a bit more complex with white chocolate, champagne, butter, sugar, corn starch and cream. If you are using recipes from the book, I have two tips: They say they make 50 macarons, but beware I got way more out if them. Also use less liquids than the filling recipes suggest, as they won’t harden otherwise.
