Plum Fruit Leather with Coconut Sugar

An old time favourite sweet of mine used to be ‘fruit by the foot’, a roll up of fruity jelly-like candy. Back in the day I used to eat them whenever I could. Obviously today, processed candy like this isn’t an option anymore so after a nostalgic craving of mine I started looking for sweet but healthy alternatives and found roll up fruit leather. In the essence it’s just dried fruit, but the shape and consistency make it the perfectly healthy ‘fruit by the foot’ snack alternative.

As the trees in my back yard are currently supplying me with tons of free plums, the decision which fruit to choose wasn’t difficult and with only two ingredients, there is no excuse not to try it. Enjoy!

Ingredients
  • 1 kg Plums
  • Coconut Sugar (amount according to taste)
Servings: roll ups
Instructions
  1. Preheat oven to 200 °C.
  2. Cut in half and pit plums. Lay them out onto a tray cut side up. Put in the oven for 20 minutes.
  3. Blend the baked plums until smooth. Add coconut sugar to taste, then pour the mixture onto another banking tray (with baking sheet!).
  4. Set oven to 60 °C.
  5. Dry the mixture in the oven for about 6 hours. When the surface of the mixture is no longer sticky, your fruit leather is done and can be cut into whichever shape you prefer.
