As me and my friends are officially graduating from university today, making a mortar board cake for our graduation party seemed like a perfect idea. As the entire thing was quite a rush and I prepared it at someone else’s house the pictures unfortunately only capture a minimum. However, all in all it was a lot of fun, quite easy and tasted super good. Here are my tips:
THE DOUGH: Choose a fluffy but firm dough recipe. The one I used for the hat required 500g butter, 500g sugar, 500g self-raising flour, 8 eggs and some vanilla extract. It will give you enough to make quite a big hat. Start by beating the sugar with the butter first to make it extra fluffy.
FILLING THE CAKE: When you fill your cake, firstly cover the borders with some buttercream and then fill your cake with e.g. jam. This will prevent the filling from squirting out of the cake and ruining your coating.
THE COATING: When filled, coat everything in buttercream. Start by putting all the buttercream in the middle of the cake and carefully spread out towards the rest of the cake. Try to work as smooth as possible.
THE FONDANT: Finally cover everything with fondant, put the hat on the book (careful, it’s heavy by now) and decorate. The base of the mortar board is pure cake, whereas the top cover is simply cartboard covered in fondant. No one will know ;)
