Chia pudding has been on my ‘to try’ list ever since I discovered the health benefits of chia seeds. As I am currently trying out a new detox week, today I am only allowed to have bananas, vegan milk and vegetable soup. Obviously after reading that, I instantly googled a chia seed recipe and adapted it to my taste. So far I had it for breakfast, in the afternoon and I am planning on having it as a dessert after dinner. It’s vegan, gluten free, and with about 230 calories (in case you count) it’s worth giving it a try!

Ingredients
  • 1 ripe banana
  • 2 tbsp chia seeds
  • 1/4 cup chocolate coconut milk (or any other milk)
Servings: glass
Instructions
  1. Blend the banana and coconut milk until smooth.
  2. Add the chia seeds and blend one more time.
  3. Decorate with fresh banana pieces and a pinch of cinnamon.
  4. Put in the fridge for 1 hour until chilled. Enjoy!
